Cooking with ZIMA Magazine and helping children

On 8 March 2021, ZIMA Magazine hosted an online charity tea party and a masterclass on making a honey cake with Gift of Life Patron Katya Galitzine and ZIMA Magazine editor-in-chief, celebrity chef Alexei Zimin.

The funds raised during the event will enable Gift of Life to pay for vital medicines for children with cancer in Russia. Many thanks to Katya, Alexei, the ZIMA Magazine team and everyone who joined us and gave their support to the cause.

The event took place on day one of the “Russian Week in London – Maslenitsa Festival” and became part of the #LifeSavingBirthday campaign marking the Gift of Life 10th anniversary.

Maslenitsa week continues as well as our anniversary month of March. So we invite you to celebrate Gift of Life’s birthday and take part in the ZIMA Magazine honey cake contest. It’s easy as 1-2-3.

Alexei Zimin’s Honey Cake recipe

  1. Honey (200 g)
  2. Butter (100 g)
  3. Eggs (4 pieces)
  4. Sugar (50 g)
  5. Plain flour (300 g)
  6. Baking powder (10 g)
  7. Sour cream 30% (300 ml)
  8. Condensed milk (100 ml)

Step 1 – Melt the butter and mix with liquid honey (150 ml) until smooth. Beat eggs and sugar with a whisk. Mix baking powder with flour. Use a spatula to stir the egg mixture with flour. Add the butter and honey mixture and stir.

Step 2 – Divide the mixture into 6-8 equal parts and spread them in equal circular or rectangular layers of 2-3 mm thick on baking sheets covered with baking paper. Bake one layer at a time in the home oven at 180 degrees for 5-7 minutes. Let them cool down.

Step 3 – Whisk the sour cream with condensed milk and honey. Assemble your cake: put the first layer the baked side up, coat with cream, and the next with the baked side down. Cover the top layer with cream too.

Step 4 – Grind one layer in a blender to make fine crumbs. Sprinkle it on top of the cake and on the sides too. Leave the honey cake to rest in the fridge overnight. Enjoy with tea the next morning!
